Fish Offcuts are often the product when you cut open a leaping trout, leaping salmon or leaping sturgeon using a knife, to provide the player with 10 cooking experience. A higher level fish will successfully produce offcuts more often than a lower level. Offcuts can be used as fish bait, most used at the barbarian fishing spots. If you have more than one type of barbarian bait in your inventory, the offcuts are used as bait first, then roe, followed by caviar.
